  • 1 cup flaxseed
  • 2 zucchini
  • 1 tomato
  • 1 cup of dehydrated tomato
  • Basil
  • Cilantro
  • Sweet paprika
  • Salt or nutritional yeast

1. One hour before preparing: soak the dehydrated tomatoes in water; in another cup put the flax seeds with 1 cup of water.

2. Clean and grate the zucchinis on a fine grater (I did not peel them, I have organic zucchini).

3. In the blender, blend: tomato, soaked dehydrated tomatoes, basil (I put 5 leaves).

4. In a cup, mix the grated zucchini, the blended tomatoes and the flaxseed with water (with soaking the seeds absorb all the water, leaving a 'slimy' consistency). Season according to your taste.

5. Place the dough on the trays of the dehydrator covered with the non-stick sheets or with the parchment paper. Smooth the dough with a spatula. This dough should not be too thin, it has a lot of vegetables - a lot of water that is lost in dehydration (I left the dough thick about 5 mm). Put in the dehydrator.

Note: It can be prepared in the oven (in the lowest possible temperature ... the crackers remain alive only if the temperature does not exceed 40 ° C = 104 ° F).

6. When one side is dry enough, they can be turned over and with a knife or pizza cutter to form 'crackers'. Finish drying until crisp and dry.
