San Juan salty Coca recipe with spinach and cheese

  • 20 gr of fresh yeast
  • 2 tablespoons (soup) of olive oil
  • 1 teaspoon (coffee) of salt
  • 1 pinch of sugar
  • 100 gr of chopped mozzarella cheese
  • 200 gr of spinach leaves
  • 150 gr of sliced ​​goat cheese
  • 1/2 onion

1. In a saucepan, heat the water until lukewarm.

2. Dissolve the yeast in the water and reserve.

3. In a bowl, mix the flour, salt, sugar and put the yeast with the water in the center.

4. Mix everything and add the oil.

5. Mix everything until you get a dough. Knead it until it comes off your hands.

6. Let it rest for about two hours, until it grows.

7. After that time and with the help of a rolling pin, stretch the dough and leave it thin. It can be divided into pieces to make several cocas or simply leave it whole. Let it rest for half an hour.

8. Brush the dough with a little tomato sauce and take it to the preheated oven at 180 degrees, for about 5 minutes.

9. Meanwhile, fry the chopped onion in oil in a frying pan. When it begins to have color add the spinach leaves. Let them be done for about 10 minutes.

10. Take the dough out of the oven, sprinkle it with a little chopped cheese.

11. Next, arrange the sautéed spinach and put one or more slices of goat cheese on top.

12. Return the dough to the oven for about 30 minutes, or until the edges are golden brown.
